That is still an area where I remain largely ignorant. When is the best time to drink certain age-worthy wines? How long should you hold a wine? Will I drink the wine too soon, or too late.

Patience can have its pay-out, but knowing when the perfect time arrives is elusive.

I'm with you on this one...

I'm all about tasting a wine that has been aged, but I would sure hate to wait too long and have it taste like vinegar. Personally, I don't collect a lot of wine to be aged. I wish I could but I think I just wouldn't be able to hold out! :)

If I was to do it, I would probably buy several bottles of the same wine/vintage. Every year I would open one and compare it to the other vintages. That way, I would know exactly when it hits its peak... the only downside: once it hits its peak, I've gotta finish the rest of the bottles. Although it would be fun to try, anything that could be aged well would make this an expensive task... not entirely worth it. I'd rather just buy one bottle that has already been aged and then drink it at its prime.

Is there a better way to determine that perfect age for a bottle of wine?
